Ingredients

Shrimp
  • 1 lb large shrimp (peeled + deveined, tails on if you want bar presentation)

  • Salt + pepper

  • 1 cup tempura batter mix (or 1 cup flour + 1 tbsp cornstarch + pinch baking soda)

  • 3/4 cup ice-cold sparkling water (this keeps the fry light + airy)

  • Oil for frying

Spicy Mayo
  • 2 tbsp mayo

  • 1 tsp Sriracha (or more to make it fire level)

  • 1/2 tsp lime juice

How to Make it (quick)
  1. Season shrimp lightly with salt + pepper.

  2. Mix batter gently — don’t overmix (lumps = better).
