Crispy Tempura Shrimp with Spicy Mayo

Ingredients
Shrimp
1 lb large shrimp (peeled + deveined, tails on if you want bar presentation)
Salt + pepper
1 cup tempura batter mix (or 1 cup flour + 1 tbsp cornstarch + pinch baking soda)
3/4 cup ice-cold sparkling water (this keeps the fry light + airy)
Oil for frying
Spicy Mayo
2 tbsp mayo
1 tsp Sriracha (or more to make it fire level)
1/2 tsp lime juice
How to Make it (quick)
Season shrimp lightly with salt + pepper.
Mix batter gently — don’t overmix (lumps = better).
Heat oil to medium-high and dip shrimp in batter, then fry until golden (about 2–3 min per side).
Mix spicy mayo + drizzle on top or serve on side.
Optional: garnish with sesame seeds + green onions.
